    Maple syrup

    It had been over ten years since I tasted a Wild Turkey Rare Breed at barrel strength. That was in 2012 – when the distillery still called itself the Austin Nichols Distilling Company – and at 54.1%. This bottling is a lot more recent and the sample was pressed into my hands by my friend Pat, for which I think him! The name was coined in 1940 after a hunting party for wild turkeys. Thomas McCarthy – the owner at the time – had brought some cask samples from his bourbon and at the end of the hunt one of the participants asked 'So where is that wild turkey whiskey, Tom?'. The name stuck.

    Yes, that nose is pretty firm. Brown bread, walnuts, dates, freshly waxed leather, old books, tea and mint. That's pretty interesting. I expected it to be a little sweeter, but it's not exactly that on the nose. A lot of wood, I must say. But without bothering.

    Powerful, spicy – say piquant – start. Old leather, demerara sugar, oranges and raisins. Maple syrup by the truckload. And nice and creamy by the way. Still a kick to your teeth, though. The ABV makes itself felt, but water remains superfluous. And yes, it's pleasantly sweet in taste. I really like this.

    The finish is the best thing about this bourbon. Long, warm on nuts, licorice, coconut and honey.
