About Giacometti:

I've just spent the past 5 years living in Edinburgh. In hospitality I was snapped up young and taught how to smell, taste and enjoy a dram from those I worked with and many of the 'training sessions' I took part in. I started in the Queens Arms and finished working as a bartender in the Michelin starred restaurant 'The Kitchin' before starting my graduate training program in Dublin. I love peaty drams, those which are well sherried too... The Dalmore distillery tour with Richard Paterson as a guide, the Adelphi warehouse opening various casks and pouring straight into glasses using the copper dog, visiting Speyside, going up as far as Clynelish, over to the Isle of Skye and in January 2020 a trip to Islay just to name a few. Lagavulin with Ian MacArthur was class and I've no doubt that I'll be back there very soon. Moving back to Ireland I miss the passion those Scots have for a dram. I miss the peaty ones in the pub too... My go to standard day to day is probably Caol Ila. I guess that I'm not doing too bad for a 20 something Irish fella. Sláinte!
