Thy Whisky is a Danish single estate whisky brand produced at the family-owned Gyrup farm distillery in Thy. Founded in 2010, it operates entirely on site—malting, mashing, distilling, and maturing using organic grains sourced from its own fields. The brand embraces a “from field to glass” philosophy, with core expressions matured in oloroso, Pedro Ximénez, and bourbon casks to reflect the North Sea’s maritime climate. As one of the world’s few fully integrated farm distilleries, Thy Whisky underscores a commitment to organic practices and local terroir.
