I'm not a super big fan of Kilchoman, but this is a nice cask finish. It's a little too hard on smoke, and I really can't wait to try some 10yo Kilchoman as I think it's going to hit a balance in the next few years in the 10-14 YO range. This is a sharp short finish, but a nice introduction to the Kilchoman cask selections.

Burnt sherry cake and sweet smoke. Gulf coast shrimp (sweet and fresh something like a Langostine), subtle brine and sharper smoke as it opens. Some freshness and something like smoked kippers and dried fruits. There's a subtle pastry cream note that comes up as it opens. With water it becomes liquorice and far more doughy.

The smoke takes over here. Sharp smoke, corn bread and Lapsang souchon tea. Coal oil and raw dough, strong smoke and scallops in burned butter... there's a bitterness here that I'm not loving. The malt is lovely and chewy, but the bitter smoke is covering it all up. Water didn't help, smoke now overwhelms the palate, and it covers so much of the palate it's a little bit of a shame.

Short and powerful. Lots of smoke, more seafood/seabreeze notes. Smoke and medicinal notes. Hemp ropes and more lapsang souchon notes. The smoke covers up most of the finish sadly, but the PX finish sort of attempts to fight back. Almost hard to find it as if comes off as maple syrup instead of PX fruits.
