    Dailuaine is a rather under appreciated distillery... The spirit is thick and heavy which might turn people away; but with the right casks... it's a fantastic dram. Is this the right cask?

      Wow, Sherry Baby is right... there's so much Sherry here it's almost hard to find the spirit. Within a few minutes though it slinks in, heavy like oil paint and thick. Industrial, not in a bad way, but rather fruity industrial.... like if you tossed a case of jam into a gallon of motor oil. Intense sherry fruits, dried jam and spice cake... when you add water almond cookies, fig newtons and fresh motor oil come out. Hints of mint and over ripe strawberry washes in.

      Whoa! This is where the modern vernacular comes in; the Sherry is sort of one note, dried red fruit and spice cake with little else to back it up. The spirit doesn't separate here but rather is the backup. Thick heat and big body build with the sherry to make dragon fruit, quince jam, pork scratchings and rich figs. This is a real surprise as the nose leads very little into this for me... as it opens and with the aid of some water it becomes bigger. More of everything, more sherry (but toned down), more malt, more oak and more spices. Old oak boards, camphor, and sour cherries.

      God I wish this was longer. It's so heavy and intense that, although the whisky fizzles out... that Sherry and oily malted oak seems to linger on your palate for a while. Hearthstones and roasted pork skin meets camphor and dry cask char. It's a big one! Water does shorten it a bit though and separates the spirit form the Sherry... but it's still delicious.
