    SMWS Tasting Notes

    Colour: White peach skin

    The nose, immediately rich and heady, offered smoked vanilla, dark chocolate, tar, seared scallops wrapped in bacon, charcoal and Butterkist - and a smoky thatched cottage attic. The unreduced palate was a big, mouth-roasting whack of sweet, salty smoke; nicely chewy with clean fruits (apple, pear) pistachio, celery salt and roasted meats. With water, the nose became more herbal, like an apothecary's den or sage and marjoram flung on the barbeque; we also identified mineral notes (dusty masonry, coal cellars). The palate now satisfyingly sweet and smoky - toffee, iced caramels, ash and a smoked seafood platter. The distillery lies near Kildalton.
