    After the Amontillado comes the Palo Cortado. I'm not a sherry drinker and am more familiar with the different maturation styles through whisky. The two bottlings differ very little in color. This Orkney (HP) has a rich golden hue.

    • Nose
      On the nose, the whisky is initially rather closed, with the smoke barely noticeable. There's a fruity note with a fruity acidity, perhaps yellow plums with citrus aromas. Alongside this, a warm cocoa note is present, behind which the light smoke is hidden.
    • Taste
      The whisky needs a little water; then it becomes noticeably softer and creamier, developing a lovely caramel note with creamy aspects and cocoa. The taste is also significantly less smoky than the Amontillado, and therefore less peaty heather. The whisky starts with a yellow-fruit sweetness, then becomes spicier, and finally acquires a slightly woody-smoky note, rather delicate. And then there are the hints of heather, rather subtle and hidden.
    • Finish
      The whisky finishes less hot, becoming slightly dry with subtle smoky notes that blend with chocolatey caramel.

      This bottling is indeed more complex and perhaps a bit more challenging than the Amontillado maturation. You have to pay more attention to the aromas; they aren't as prominent. And the alcohol is somewhat better integrated, although there's still a certain sharpness present. I like it a touch better, but it lacks some of the Highland Park character.

      Ultimately, both are nice, very drinkable Orkney whiskies.
