    A whisky that vividly showcases soy ferment aroma-a note frequently found in Chinese Baijiu- which is not particulariy pleasing for my taste.
    I can feel the growing pains of a young distillery still finding its balance.
    • Nose
      78 78
      Dominated by a thick, fermenting soy sauce aroma — almost like meju chunks floating in brine.
      There’s also a touch of soy-braised beans and anchovy fish sauce, though they sit beneath the dominant umami.
      With time, the nose develops into BBQ ribs glazed in sauce, damp cardboard, and faint traces of stale walnuts.
    • Taste

      The medium body carries quite a prickle of alcohol.
      It opens with the umami punch of pure MSG and the mustiness of old walnuts, joined by a tangy grain vinegar note.
      Mid-palate brings under-ripe plums, prune juice, rusty metal, and raw garlic spice — layered with the briny touch of shellfish and both wet and dry wood.
      As it rolls on the tongue, grape jam sweetness emerges through the MSG backbone, blending with smoked sausage, a faint sulfuric note reminiscent of hot springs, and seaweed hints.
    • Finish

      On the retronasal side, soy sauce and meju remain dominant, joined by anchovy sauce, BBQ ribs, rusty coins, and cheap sausage — with a light seaweed note lingering.
      The palate echoes with MSG savoriness, sour under-ripe plums, grape jam sweetness, and the same briny shellfish-and-metallic undertone that persists through to the end.
