    Truly exceptional cask usage. A superb balance, a superb sherry whisky. It still has a hint of Johnnie Walker's character. Never too sweet or too cask-aged. Perhaps proof that the distilleries within Singleton are essentially hidden gems kept in plain sight. A very enjoyable bottling at a very good price!

    Value for money: Excellent!
    Would I buy it again?: Absolutely!
    • Nose
      Plenty of sun-dried apricots, yellow dried apricots, dried red plums, and a hint of raisins. Rather than a dark and roasted sherry, it's quite fruity. Mixed stonefruit-like aromas. Light cinnamon and obvious grey peppercorn. Nice dried orange and obvious caramel. Surprisingly so at first glance, but not so surprising after a bit of thought, it's quite Johnny Walker-esque. A soft and "lush" sherry. Obvious grape molasses and a slight biscuit-like texture underneath. Walnut jam. I think another user's comparison to raspberry coulis is apt. A slightly dried leaf-like herbal undertone develops over time. Light almond, vanilla, and perhaps a little cream of coconut. Orange marmalade, fig chutney, and red plum jam. Chocolate ganache over time. A slightly varnishy undertone. A very slight sulfurous, unpleasant note comes and goes over time, like H2S, and a meaty note. A very enjoyable, quite complex sherry whisky nose.
    • Taste
      On the palate, a medium-low body. Light tobacco, dark chocolate, ganache. Plenty of vanilla and a hint of custard with dried and toasted coconut pieces. Fresh and dried apricots. Confit orange peel. Plenty of spices; black pepper prominent, both grey and green. Very light young banana. Cinnamon stick. Very light florality and freshly squeezed orange juice. Nutmeg and perhaps cardamom. Very slight warmth. A Christmas cake effect lingers; a combination of cocoa sponge cake, ganache, and spices. Medium-low, if not low, sweetness. Cloves, allspice! Perhaps sweet red chili flakes underneath. Extremely complex, quite enjoyable and balanced; very good.
    • Finish
      Clearly aged wood, old furniture, and grey peppercorn. Slightly varnishy. After all that oak and wine influence, the tannins are surprisingly balanced. A carrot-like undertone. Clearly dried oranges. Medium-long length. Intensity slightly above medium. Lovely fresh stonefruits. Peanut butter and shells. A slight gluey undertone. Raisins and dried red plums. Orange marmalade. Very enjoyable!
