    10/02/2024 - bottle

When I opened the bottle, not for this review, but to drink, it reminded me a lot of Lamas Dog's Bollocks I, with that mix of peat and IPA beer. The 50% makes it spicy, but it's pleasant because a lot of good things happen here.

Unfortunately, I believe that this Double IPA finish took away the possibility of the announced peat to shine, as it would easily exceed 80 points.

The starter has caramel, milk chocolate and a hint of vanilla. Spicy, with sweet and warm spices, caramelized fruits, cooked and sweet fruits, pleasant and intense wood and burnt sugar. Then come caramelized almonds, sweet bread and malt. In the background, yellow flowers, cloves and cinnamon.

With water it released more vanilla, the spiciness continued and the richness of sugars, spices and dried fruits. It lacked corn ketone to be a new but well-made bourbon.

After revealing the label, I add ice: green leaves, honey, malt, caramel, burnt sugar, cloves, vanilla, green coffee. Oily, it went well with ice, but I tried to find the peat mentioned on the label and, for me, it is just a memory. No alcohol and without the typical Lamas yeast.

A cooked vegetable appeared, very spicy but bearable, new wood, caramel, light dry vanilla, dark chocolate and peanuts with sugar. Malt, yeast and tannins. The ketone was missing for me to nail it like a bourbon, best blind test.

With water, more vanilla, more caramel, the sulfuric content was broken but a bitter note appeared. Spicy, young and lively, thankfully the wood and caramel permeating the dried fruits compensate.

Once the label is revealed, let's add ice: bitterness, green leaves, cooked vegetables, honey, propolis, it's amazing how well it goes with ice. No alcohol and no typical Lamas yeast, from the first and second generations, whereas the third generation of Lamas seems to have managed to eliminate that note of fermented must.

Medium, tannic, malty, sulfuric from steamed vegetables, some macerated flower. Ripe wood and freshly roasted almonds.
