    Strathmill by Signatory, this time from the Un-Chillfiltered Collection. The whisky is 10 years old, has a 1st fill Sherry Butt finish and was bottled by whisky,de to celebrate its 30th company anniversary. The whisky will be available at the end of 2023 for just under €60. There is no information about the duration of the finish; the color remains reserved with a beautiful gold tone.

    • Nose
      On the nose, the whisky has rather bitter wood aromas, there is no fruit. Maybe some forest honey, but its intrusive sweetness is missing, instead there is bitter cocoa and light oak. Somehow a roasted note is present. Then come fermented orange peels, which occasionally turn into a nice orange note, but then ferment again. The flavors aren't really integrated yet, the whisky isn't old enough.
    • Taste
      The whisky only has 46% ABV - but the alcohol is not well integrated. It stands out and appears sharper than it should be. There are wood notes that are too dominant and fresh - but there is also old wood in the background. Some artificial peach flavor flashes through, but is also accompanied by burnt wood.
    • Finish
      In the aftertaste there is more of a woody, musty note, which indicates that the initial casks were not particularly good. On top of that are the added woody notes of the sherry finish.

      It probably didn't mature in the very best barrels. The ones from the initial maturation were too old and gave off a slight mustiness, the finish butt was fresh and gave off wood aromas that seemed a bit too artificial. Overall, this would have needed more maturation and time to become a good whisky. This leaves interesting aspects that don't always mesh well. It's just one of the modern sherry finishings that are intended to simulate age and maturity.
