I'm definitely impressed with Westland Distillery trying to explore this in the category of American Single Malt Whiskey (not Bourbon).
This Edition 2 celebrates Talisman Barley, which is a 2 Row Winter Barley. I think I enjoyed Edition 2 over Edition 1, this being a touch sweeter.
The 2 different barleys showcased for Edition 1 and 2 were slightly different in taste, but both weren't as noticeable as, say, Bruichladdich's exploration of Islay Barley vs. Bere Barley vs. Organic Barley bottles.
This nose is a bit shy. Green apples, gentle orchard fruits. Some vanilla.
Ginger spice on the front palate, caramel, cinnamon apples, some dark chocolate (60 - 70% cacao). This is sweeter than Edition 1.
Medium. Trailing ginger, more apples, dark chocolate covered apples fading away.
