    chicken bouillon

    One of the USPs of Jack Daniel's is of course their Lincoln County Process, where every drop of spirit is filtered through the ash of the sugar maple before being put into the barrel. It is precisely this process (which is both time-consuming and relatively expensive) that makes JD a Tennessee Whiskey instead of 'just a bourbon' (the only other distillery that uses this process is George Dickel, but this is besides the point). And Jack Daniel's released a set called 'Before & After' where you can taste the spirit both before and after filtering (charcoal mellowing). I have a soft spot for new make, that's a known fact, so I love to taste the spirit of Jack Daniel's, albeit 'before charcoal mellowing' (I don't have a sample of the 'after', unfortunately).

    Oxo! Chicken bouillon! Spaghetti seasoning! Yes, that's nice. I like that dirty nose of New Make and JD's is very special. No flat cooked vegetables as I am used to from many Scottish new make, but surprisingly umami.

    Fresh and clean on the tongue, although very light in body. A lot less umami than the nose suggested, but quite tasty and accessible. Interesting, because I absolutely cannot make the connection with everything I have already tasted from JD. This is very special (which, to be clear, does not equal tasty, although it is quite tasty).

    The finish is surprisingly long for a new make that was cut to 40%.
