Dingle

Dingle Distillery has launched its first core whiskey expression, Dingle Single Malt, a milestone in the distillery’s history and a huge step forward in its growth journey. In doing so it becomes one of few Irish distilleries to produce a core single malt product made entirely with its own spirit.

Some 50,000 bottles of the triple distilled, non-chill filtered Dingle Single Malt have been produced and will be sold domestically as well as exported to key international markets.

Matured in PX Sherry (61%) and Bourbon (39%) first fill casks and comprising predominantly six to seven-year-old spirit, every element of the production of Dingle Single Malt is manual, with a human hand and eye at each critical point. The distillery’s water source is its own well, 240 metres below ground.

    The first Core Range bottling after 5 batches of single malt. Bourbon and sherry casks and with 46.3% instead of 46.5% for the first time. Do something different? Around seven years old, which is definitely noticeable. A beautiful and promising bottling that already knows how to convince.

      Pure and clear and less bubblegum fruitiness than the last single malt batch 5, in which a few Madeira barrels were added. Although: if you let the glass stand a little and then smell it again, the sweetness that is so characteristic of Dingle penetrates your nose. Tropi Frutti gummy bears, spicy honey, vanilla pudding, raisins. With allspice, pepper and nutmeg as a counterweight. Lots of toffee and chocolate.

      First comes up from its chocolaty side and delivers nougat, marzipan, toffee, caramel and warm cocoa. Here just slightly fruity with fresh apples, dried apricots and a dash of lemon. Over time it lays dry on the tongue and spreads there. Chocolate shavings, yeast dough, malt.

      Medium long and dry, chocolaty, woody and spicy. Hardly any fruit left.
