    Batch 5 of the 8-year-old cask strength and we have another winner on our hands. Very intense, heavy coastal spirit with a wonderfully integrated Oloroso influence. Compared to the re-charred Oloroso batch 4, I find this has slightly less wood influence and a touch more coastal character to it. Value (£48) : 8/10
    • Nose
      Initially nutty Oloroso sherry hits. Roasted salty peanuts. Tart dried cherries, plums, red dates. Green musty grapes. Demerara sugar and thick molasses. Then a wafting salty honey BBQ note. Loads of umami with roasted meats and mushrooms. The peat makes itself known. It is earthy and mineral with damp rocks and ocean air. Vegetal damp dunnage notes. Some black pepper warmth comes through with oak spices as well. Really enjoying the nose on this one it keeps improving with time.
    • Taste
      Very oily. Brown sugar and maple syrup. More tart dried red fruits reappear with morello cherries, dried plums and sour grape. Orange peel and cocoa nibs bring some bitter depth. Again that umami note comes forward. Honey-glazed smoked ham. more vegetal dunnage and less peat here on the palate though still plenty of salt and minerality. Salted peanuts. Then the oak spice hits. Chilli and candied ginger with some cinnamon and cloves. Drying tobacco and new leather.
    • Finish
      Medium to long in length. It is initially mouthwatering and spicy with that chilli hit continuing from the palate. Then it develops into a salted caramel mocha note. By the end just the salt remains and that remains on the palate for ages.
