    A well-made and complex whisky, but the 21yo is more to my taste. Back on this sample a month and a half later. It has changed significantly, the mushroom notes, but also rubber or black powder being dominant. Curiously, I find it more to my taste this way, these flavors perfectly integrated into the sherry constituting a set of qualities rather than defects. And the mouth also seemed more punchy, which makes me go back one point.
    • Nose
      We enter here in another territory, more complex and less easy to apprehend. From encaustic to abundant, sherry of course, but also tertiary organic notes of black mushrooms, then dried fruits. It is more and more greedy after a long aeration, with candied fig and even a touch of exoticism evoking a Sauternes. The different flavors are very well melted.
    • Taste
      Again, the attack is weak. This mouth is complex, less greedy than the 21yo. We find the organic notes of the nose, mixed with dried exotic fruits, mandarin and dried papaya, some spices (ginger) and of course sherry. The wood is very discreet.
    • Finish
      Again, long enough for a whisky at 43%, but lacking a little aromatic intensity.
