Whisky reviews for Bimber 2017 PST

Fruity, rich and full of flavour, Bimber again shows why it is leading the new wave of craft whisky distilleries.
    • Nose
Somewhat floral and pretty fruity with some green beans as well. Apple sauce comes to mind, as well as apricots, passion fruit and some sweet, dark honey notes. Light perfume-y touches also. Not extremely expressive.
    • Taste
An oily, thick mouthfeel. Fantastic fruity arrival with plenty of citrus, tinned pineapple and mangoes, but also chalk and white pepper. There's some definite similarities with the cask that was bottled for the Netherlands by Bresser & Timmer. Water bring out some mustier notes, as well as melon.
    • Finish
Lingering orchard fruits, cinnamon and some pepper as well. A touch of galia melon again.

Herbs, fresh grass, after a few minutes it becomes sweet towards the pear.
    • Taste

Cheap fruit brandy is an understatement. A horror for my taste buds. These are the free digestifs in the restaurant around the corner, where you say thank you with a grin and are happy about the sip of water that is still in the glass to rinse it off
    • Finish
      60 60
      Thank goodness short

Hard to get hold of, but it's a beauty - full of flavour, but easy to drink.
    • Nose
      86 86
Fresh fruit, floral, clean, some coconut.
    • Taste
      87 87
The usual DNA I expect from a Bimber is there, but overlaid by other notes - floral, tropical.
    • Finish
      86 86
Medium finish - some tropical notes linger.

Might serve well as digestif - water recommended
Actually I noticed again a touch of gin in the aftertaste as with the last Bimber - I wonder if that is typical for this distillery
    • Nose
      85 85
Green fruits, lime zest, carambole, wet hay, little leafy, austere, honeydew, little herbs, thyme, rosemary, vanilla, little flowery
    • Taste

Toffee, honey, vanilla, yellow fruits, apple pie better than the bourbon official edition

    Festival tasting format (06.06.2021):
Pine, chamomile, pectin, mulberry. It tastes like a pile of oak, strong, sour compote.

    • Nose
Super fruity! A whiff of grapefruit at first, which is quickly followed by a hint of melon, tinned apricots and pears. A drop of honey too. Then red apples and a pinch of ginger in the background. Later I also get a faint floral note.
    • Taste
Red apples. Honey. Again some tropical fruits such as pineapple and melon. Milk chocolate and vanilla. A hint of ginger, cinnamon and black pepper.
    • Finish
mid-long to long. Honey, caramel, milk chocolate and red apples. And also the same spices as in the taste.

    Color: beautiful gold, golden reflections.

Nose: a well integrated alcohol, a fruity nose, exotic fruit. Spice, a little cinnamon. This is a delicious and pleasant nose.

Palate: we are of course on the exotic fruit, melon, mango. Pepper.

Overall: long, on cereals, wet grass and exoticism, a touch of chocolate.

Comments: for a young whisky, it is quite honorable.
