    Notes from an online blind tasting ...
    Great part. Totally surprised me. Comes over older.
    • Nose

      Sauerbraten, meaty, juniper berries, bay leaf, sour cherries, dry dumpling dough.
      With a little time in the glass, something like Gewürztraminer and charred caramel develops.
    • Taste
      Spicy, oily start. Canned fruit salad, nougat and dry waffles.
      With the second sip of spicy tobacco and plums, almonds are added.
    • Finish
      Medium to long.

    Fruit forward, sweet, zesty sherry notes - like an alcohol soaked orange cake. Easy drinker.

    Cotswolds Sherry Cask 57.4%.

    25ml sample from a distillery tasting pack. I’ve had this sample at least 18 months, consumed Sep 2022.

    Mid tone amber.

    Aroma is rose petal infused toffee, rich bourbon char, caramelised, hint of oak, some Tunnock’s caramel wafer dialled up to 11. Wow, I really like the aroma.

    Body is watery.

    Taste is simple but nice, pointed, again caramelised and toffeeish. Not much alcohol heat given the strength. A soft biscuity note. I didn’t want to water it down as it drank so easily at bottling strength.

    The palate is quite simple but it drinks really well. The nose is really good – the sort of dessert whisky nose I’d seek out in a good American whisky. Just slightly lacks the complexity on the palate that would have taken this into the top tier.

    Still, this is impressive. Good spirit in a good cask. It’s not a silly sherry bomb. If they can keep this standard up when they release older whisky, they’ll have a customer in me! £70 a bottle is not too bad and I’d seriously consider paying that. 3.625/86

    Golden. Nose: Lightly spicy, fruit, dish. Taste: Fruity, vanilla, bland, slightly spicy, no sulphur.

    Lovely expression from Cotswolds. The sherry is very prominent and it's a beautiful drinker even neat.

    N: Brown sugar, cherries, figs, dates, sultanas, cinnamon, espresso, Christmas spices

    P: Very strong and lively, what's on the nose follows on the palate but add some roasted almonds and some blood oranges

    F: Peppery, spicy, long and finishes with dark red fruits

    In a private Cotswolds tasting organized by two Finnish whisky enthusiasts and directed by Rob Patchett from the distillery, this whisky was the winner of the all tasters poll, leaving behind a PX single cask, an Oloroso single cask, a peated cask, and two 46% batch releases. It's easy to understand why, since this one has a rounder and more full profile than either of the sherry single casks. However, I feel that as good as this is, I still like my Cotswolds with a bit less obvious cask touch, like the batch releases, because they are more singular whereas this is "just" a good young sherry whisky.
    • Nose
      Toasted wood? But the casks aren't STR:ed. Uh? Nose, sure you're okay down there? Nutty and rocky, with a bit of pine and rubber. Carrots? Hey nose, you can call a sick day if you have to, you know? With water: planky wood and juniper. Surprisingly strong juniper, actually. The above may not sound inviting, but it isn't bad to me, although the juniper is surprising. There are no clear off notes or sulfur.
    • Taste
      Spicy, faintly rubbery chocolate. Too sharp neat, and feels like it's missing some weight. Water rounds it up nicely. Massive sherry with a strong spiciness. Feels full on the tongue. Some fruity touches speak of the Cotswolds distillate, but perhaps the sherry infulence is a bit too strong for that gentle spirit? Still, I can't help but like this.
    • Finish
      Lasts a while, but is mostly on the cask. A gingery sherry note. A lot of water breaks the cask influence, making it gently sweet and fruity as per the spirit.

    astonishingly ripe, young whisky. Surprisingly tasty.

      sweet and spicy, fruity, slightly sour, some aniseed, butter crumble.
    • Taste
      Strong start, tart oak, sweet toffee-like sherry notes, then quite strong, cooling alcohol
    • Finish
      rather dry, bitter oak, also nice fruity sherry notes

    A marriage of carefully selected and blended sherry casks makes up this rich and fruity expression. Each yearly batch of our Sherry Cask Single Malt Whisky is unique, drawn from our finest American and Spanish oak hogsheads & butts, some of which have been seasoned with dry Oloroso sherry and others with sweet Pedro Ximenez. All have been sherry-aged through their full maturation for a deeper and more flavourful whisky.

    Full of dark stone fruits and a hint of roasted almonds, followed by peppery oak spice.

    Carefully sourced ingredients
    Malt: Odyssey, grown on Cotswolds farms and floor-malted at Warminster Maltings.

    Serving suggestions
    Best enjoyed on its own, but we don’t believe in rules when it comes to drinking whisky – sip this neat, over ice, in a cocktail – however you like!

    Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavours.

    Water: Village water supply - filtered, softened and demineralised before use.

    Wood: American and Spanish oak hogsheads and butts, seasoned with Oloroso and Pedro Ximenez sherry.

    Lovingly crafted
    We started making this release by using 100% locally grown, floor-malted barley from the Cotswolds which is mashed and then fermented for more than 90 hours before being distilled in our bespoke copper pot stills, resulting in a new make spirit with a fantastic fruity complexity.

    We then took our fruity new make spirit and aged it in American and Spanish oak hogsheads and butts seasoned with Oloroso and Pedro Ximenez sherry. Once aged for its full term, we bottled the single malt whisky onsite with only minimal proofing down (57.4% ABV), non-chill filtered and without any added colouring.
    • Nose
      Brown sugar and cherry pie with a touch of roasted coffee beans.
    • Taste
      Viscous and rich. Full of dark stone fruits and a hint of roasted almonds.
    • Finish
      Peppery oak spice accompanied by notes of dried fruits.
