The 17-year-old for the charity auction, currently the oldest malt in the distillery, is of course something very special, and I am delighted to have received a sample from the distillery for tasting. A similar single bottle was filled for Asia some time ago and was also auctioned there as part of a charity auction.
Basically I am open to continental European distilleries. I particularly enjoy those distilleries that have their roots in brewing. If the bottlings are still in cask strength, I am extremely happy. Säntis sympathetically printed 'Trible matured' on the back label. Trouble with Trib (b) les? Sounds like small fur animals. Maybe a Star Trek fan at work?

    EYE / NOSE
Visually honey golden with an extraordinary shine. Let's get to the flavors. I approach the malt with a lot of respect and ponder a little how the Swiss 65.3% ABV could hold after 17 barrel years. But okay, there are different options. Inside the nosing glass, the malt does not run down in long spider legs, but as a coherent 'curtain'. Fits like a glove to the heavy, oily impression that the malt leaves in the glass.
First a soft coconut scent in the nose. Reminds me less of the meat of the coconut, but more of the sun oils with coconut aromas. Then red apples. Finally, hay and herbs follow, almost like the scent of a summer meadow. The herbs turn into sweet pipe tobacco. The sweetness can be classified very precisely. That is honey. Mildly spicy, very aromatic, slightly resinous (pine) honey tones. It is interesting that I do not notice any annoying alcohol in my nose, and that with a good 65% ABV.

    PALATE
Hui, is powerful, warm and wonderfully creamy on the tongue. I am reminded of boiled fruits, which may be wine influences. Then vanilla and caramelized sugar. The honey sweetness is also back. Herbal forest honey can be tasted. More powerful and darker in the aromas than before in the nose. As a result, the duration of the ripening helps. Age helps to balance the honey with fine-tart and spicy oak notes. The sweetness doesn't stick, it flatters the palate. The powerful alcohol also helps. Never exuberant, biting and dominant, but complementary. No bitter notes but nice herbiness from the beer barrels and even a little berry fruit from the wine. A strong and elegant, multi-layered taste profile. What I particularly like is how well the components harmonize, because I am usually not a big fan of triple Maturations or similar. For me personally, full ripening is the closest.

    FINISH / CONCLUSION
Wow! This is not a sweet honey liqueur but a very strong whisky with its very own - typical Säntis - aftertaste. The aroma pot pourri and the herbal notes remind me a little of the very first trinity. Just a reminder, but you can clearly see the strength of the old beer kegs. A completely self-contained whisky composed with a lot of intelligence, which appeals to me very much.
