Conclusions. This is definitely a real and very worthy Mortlach, created on the basis of a classy sherry cask. Very dense, very consistent and very bright. And this despite the age of only 11/12 years. It gets along well with water. Dilution to only 50.5% abv not only greatly softens and harmonizes the drink, but makes it even brighter and richer at all stages of testing. Compared to the branded line (12/14/16/20 yo), the release tested here is simply ideal. Of course, it is not fully matured, which to some extent detracts from the delight, but in this particular case, this is not the main thing. The important thing is that this is exactly the sherry Mortlach that we adore. Rating 88/89.
    • Nose
Aroma: intense, very dense and solidly saturated. Requires a little aeration. Alcohol is felt at first, but does not interfere much. The rich sherry component dominates from the first inhalation. Fruity-sweet tones (cherry liqueur, plum jam, raisins), cane molasses, honey aromas, orange peel, refreshing infusion of sweetish-spicy herbs, delicate floral bouquet, caramel-cream shades, pleasant woody smells, old varnished furniture, traces of burnt peat. Alcoholic sharpness disappears rather quickly with the transition to complete harmony. The unwavering persistence of the bright profile is especially striking.
    • Taste
Taste: strong, abundant. Perfectly follows the aroma. The beginning is quite peppery with an abundance of sweetness and moderately hot spices. Cherry liqueur, marmalade-jam tones, raisins, candied citrus peel, spicy dark honey, bitter chocolate, burnt sugar, creamy motifs, floral perfume, infusion of sweetish-spicy dry herbs, luxurious woody aromas, traces of burnt peat. In development after adaptation of receptors it becomes softer, alcoholic sharpness decreases, at the end of the drink mainly moderately tart and bitter tannins remain. Very good
    • Finish
Finish: Quite long, voluminous, moderately spicy with a clear sherry influence. Fruity-honey sweetness, creamy notes, sweet-spicy herbal infusion, burnt sugar, slightly tart wood with a little bitterness and traces of organic sulphur from the sherry cask. Perfectly complements the taste.
