About Akkeshi Distillery

The Akkeshi name comes from it's home town in Hokkaido. Akkeshi sees large temperature changes through the year, from as low as –20°C in winter and hovering around 25°C in summer.

The two pot stills were produced by Forsyths. The wash still has a 5,000L capacity, and the spirit still that of 3,600L. They are heated by radiators, with shell and tube condensers. The six washbacks are stainless steel.

The whisky will mainly be stored in a 4 level dunnage warehouse. The whisky will be matured using bourbon, sherry and mizunara casks, as well as testing a variety of possibilities including maturation in wine and rum casks.
