Caol Ila independently bottled by James Eadie with a 7 month finish in 1st fill Amontillado Hogshead made from European oak. The whisky has a yellow white wine tone.

Sweet smoky notes come to the nose, sweet apple compote made from smoked apples. And a little wood. The smoke is ashy and warm and contrasts the sweetness well. There is no alcohol and the sweetness does not seem young and immature. There is also vanilla cream with mirabelle syrup.

In the mouth, the sweetness is initially less present than in the nose. With a splash of water, the light fruity note forms a good base on which the smoke unfolds.

In the aftertaste, the whisky becomes dry, the smoke remains well preserved, along with a hint of chocolate that remains when the bitter notes have faded.
A nice Caol Ila, which at 9 years old has not yet developed any particular depth, but does not seem too young either. A light fruity smoke without any particular complexity, but which is pleasant to drink and has no off notes. At over €80 at the end of 2024, however, it would be too expensive for me.
