Soft honey that's sweet with a lemon tang, vanilla bean.
Baked fish, oily and topped with samphire, parsley and coriander

Very oily and spicy; from those peppercorns and baked fish notes, or, ginger.
Steamed chestnuts, smoked fish. Salt baked seafood drizzled with lemon and freshly cracked peppercorn.
I am constantly reminded of a salted licorice, herbal and salty. In a way like hacks sweets.
Subtle vanilla, coriander again. Milk chocolate.
Very well rounded with full of earthy and sea flavors, a harmony of the coastline.

Medium and dry, lots of pepper remains. Big spice bomb.
Young 2 - 4 years old ripe pu erh, dark notes of herbs and spices. Plum, prunes and dried apricot.
The sherry is well influenced in here although it does not overpower, which is a good thing. In a way it complements the strong peat and soft vanilla essence body.
