It's awfully good! But it lacks a little complexity and balance: the side "in waves" and the final which collapses make him lose points.

Super marked and precise cherry Kema, with a light balsamic vinegar on top, then other red fruits (blackcurrant, cramberry) with a cream / whole yogurt side that goes with the cherry. Small gingerbread side that arrives, accompanied by a light smoke of embers (end of fireplace). It smells super good. A few light white flowers make their entry (lily of the valley, carnation), and the fatty side of the cherry gradually gives way to fresher notes (chlorophyll, mountain flowers), making the whole much more balanced. There is also a slight mineralite (mountain river), which gives a side "fruits at the water's edge in spring". With a second nose after tasting, we have hints of old furniture and more spices, mixed with cherry.
맛
We find cherry krema and vinegar, but with a spicy wave (chilli, gray pepper, turmeric) slightly astringent and a smoother smoke with a hint of salt. The minty freshness and mineralite arrive at the end of the mouth, like a river accompanying the cherry krema.

The finish is sometimes very short, sometimes carried at length by the wave of spices (depending on the size of the sip) with always a very long persistence on cherry krema, dried fruits (cramberries, raisins) pepper and a hint of menthol
