What is Irish Single Malt Whiskey?

“Irish Single Malt Whiskey” (often written “Single Malt Irish Whiskey”) refers to whiskey made at one distillery from 100% malted barley and distilled in pot stills. As with all Irish whiskey, it must be mashed, distilled and matured on the island of Ireland, matured ≥3 years in wooden casks (≤700 L), bottled at ≥40% ABV, and may contain only water and plain caramel colouring (E150a). The GI’s labelling rules also state that the term “Single” may be used only when all of the whiskey was distilled on the site of a single distillery.
