It's definitely Highland Park. Opens on that heather honey with soft aromas of highland smoke. Vanilla pods and honey are the base layer, some apples and gummy bears are added to the mix.
With time the smoky element becomes refined and it turns to a more burnt wood aroma. Citrus notes develop, namely orange peel followed by some darker berries.
With water is picks up the sweetness, more gummy bears and some caster sugar. -
Hot on arrival, lots of alcohol and plenty of burn. There's some sour elements in there, the orange peel is making an appearance. Hot peppers, lots of spices and plenty of burn continue on the tongue and overpower anything else.
Water calms the heat on the paper but at the same time exposes it for being quite one dimensional -
Hot with new oak for a medium and disappointing finish. With water the fire is gone but some sour oak remains
