Nose: Earthy peat, with a fresh acidic zing. Light ash, turmeric, and a hint of smoked chili. Yellow plums, Fuzzy Peaches (the candy), melon, caramel, and some light brown sugar. Some coastal notes of fresh shellfish and rock salt.
Palate: Medium-light but oily texture. A good nip of heat. Sweet up front, with plenty of ginger and honey. Very salty and savoury in the middle, like a good chicken broth. Some caramelized mushrooms on the development, with caramel, oak, moss, and ginger. Some tart green grapes sneak in there. Clayey and chalky on the back end.
A dribble of water evened out the heat and emphasized the fruity notes, adding some milk chocolate to the back of the development as well as making things a bit ashier.
Finish: Fairly long, salty and tangy. Smoked salt, grilled asparagus, tall grass, corn silks, lemon zest, dragonfruit, and ginger. A hint of sweetened condensed milk.
