"Originally matured in an Oloroso Butt and finished in a PX" - The way to tell you that the whisky was in need of saving.
    • Nose
      86 86
Opens very PX like, it is sweet raisins, hints of spices and cocoa powder. With a good breathe it picks up aromas of freshly made toast wet with butter and even some marmite (you either love it or hate it). Some leathery notes adding the nose, perhaps the Oloroso doing some talking.
    • Taste
      84 84
Hot on palate, wow it's a spicy one, its like a ghost pepper on the tongue. Big attack of what feels like new oak, oh and there's some musky stinky sulphur lurking in there. There is sweetness, imagine raisins dipped in sugar.
    • Finish
      83 83
Finish brings in some caramel that I didn't notice in the nose or palate. It's quite short and lasts a tad less than the spice. With water the finish improves, picks up woody notes and gains some length.

Well, how to get here on Fountain Of Youth is a mystery to me, the first really inappropriate name I think. Otherwise, a good quality Sherrycask with slightly different notes, thank God in the mouth not the sulfur of the nose.
    • Nose
Young, but somehow inviting mix of sulfur and chocolate, some ginger, some caraway, cocoa powder, almonds, pecans, light, light tobacco notes, you realize that he was first in a bourbon barrel, in between, vanilla come out, nougat and other
    • Taste
Very strong start as at 60.9% no wonder, an interesting mix of the 3 different Casks, lots of nice Nussigkeit, nougat, pecans, walnuts in normal and black, tobacco box, new dresser, dry dark chocolate, a little like a dry, stale Tuscany wine, some grapefruit peel, but eigtl. Garkeine fruitiness here despite the two sherrycasks, probably. a touch of blackberries and cherry pits, but rather in the dry tobacco & oak direction with all sorts of nuts
    • Finish
Dry, according to the age rather short to medium, bitter chocolate, some grated walnut and hay

N: This Speysider is unusual in that its a sherry finished, sherry finish. It spend the first part of its life in bourbon followed by time in an oloroso cask and then finally in PX – and yet its still called a single cask which i still find confusing. Add water and wait for tobacco notes, an unusual murky funk and mint & peas. Appears to be considerable [cask] control from that/those 1st-fill casks.
T: Even though theres a full sherry experience, its not what id call a ‘bomb’. Very good quality gear.
F: Sweet-dark-woody-fruity-malty-biscuit with a long waxy chocolate finish – lovely.
    C: Despite the double/’all’-sherry vibe, there’s more to it than that.Scores a B[-]

    SMWS Tasting Notes

    Color : Vibrant sherry hue.

The nose was beautifully decadent. Swirls  of dark choco engulfed candied ginger  and orange peel.We enjoyed  crunchy gingerbread biscuits with a glass of intense sherry. There was a joyful, youthful vibrancy to the dram. The full on flavor revealed a cupboard of dried spices (cinnamon, coriander) and a treacle sweetness. This was big, young and complex.A splosh  of water brought polished leather shoes to the fore, there were honeyed raisins imbedded in a tray of flapjacks. The taste, now more rounded, still tattooed the tongue with spicy ginger, maple syrup and clean sherry. Young whisky at its best. After 8 years in an oloroso butt,we transferred this whisky  to a first fill Pedro Ximenez butt.
