      The smell that hits you first is wet grass and hay, prickly, wafer, fudge & spice

      Fat on the palate, the spices are still there with some stewed fruit like mango & plum, hints or fresh b pineapple but they are distant. Nice mouth feel with a little caramel

    I think we can we can all agree that Springbank 21 Year Old is a grand whisky. An instant classic, so to speak. However, there are quite a few 21 years old single casks out there and this is one of those, bottled in 2016. It’s a young sherry cask for Symposion House of Taste, a whisky club in Malmö, Sweden.
    Waxy nose! Stonefruit, a truckload of hay, toffee, overripe banana, sand and pebbles. Not necessarily in that order, but that is the nose of this malt in a nutshell. Actually it’s the best of two worlds: the typical, wonderful spirit of Springbank decorated with some dark and sweet notes of the oloroso cask. This smells absolutely delicious. This entertains me for at least fifteen minutes before I have the urge to take my first sip.
    It’s quite oily on the palate. All kinds of yellow fruit: apricots, mango, peach, banana – what a feast! But a salty note and some quasi-sour peat smoke kicks in. Good strength, by the way. A fresh note of mint. Some camphor and ginger. Nice balance.
    I get a surprisingly large amount of garden herbs and salt in the long finish, while the fruit recedes quickly and asks more attention for the smoke.
    Take your time for this one. It’s Utsökt (for those who lack Google translate: that Swedish for ‘delicious’) and then some.

    Quite special, similar to the German or Swiss bottling but overall can't catch up to the UK bottling

    N: gentle, elegant, some light fruity notes and briny

    P: smooth, soft, some fruity notes with a touch of salt

    F: dry and bitter

    C: Allright

    The distillation character is well felt, with it sufficiently sweet, spicy and also vividly acidic.

      Sherry and spicy oak. Waxy apple, currant, gooseberry. Touch of ginger, camphor and mint.

      Powerful. Honeyed apple puree. Big dose of oak. Salt and pepper, chili chocolate.
    • Finish
      Long, creamy, sour. Herbals, toffee and oak.
