Notes from a blind tasting.
Spicy sherry, next to it little else has a chance. Strong barrel acid, looks familiar, but not old. Judging by the nose, it could have been bottled today. With Katjes yoghurt gums Sebastian gets to the point. Liquorice, but also a typical sherry profile with roasted aromas, beet syrup and very dark honey. Warms something fresher, sweeter, less severe.
Acid first, then roasted aromas then sweetness, but the acidity remains dominant. It looks surprisingly fruity and fresh, not at all like a modern sherry barrel storage.
The finish is rather short, here too with a focus on the acid.
