Nose: at first sweet olorosso fruits, powerful but balanced. Mangoes, papaya and bright fresh zesty oranges.Floral notes on top. Later on the stewed apples and raisins, oak and leather varnish. Nail polish. Delicious toasted almonds, cake icing, marzipan. Opal Fruits aka starburst & fruit polos!
Palate: Glorious Triple distilled, Irish Pot Still Character akin to handmade soda bread. Crunchy Fuji Red Apple. With water the nose eases but doesn't differ however on the palate a little dilution brings through savoury flavours. Maple glazed back bacon, red licorice and hard boiled fruit candies.
The mouthfeel is superb. A touch drying in the finish but in a pleasant way which has you grasping the bottle for a top up. Where the 21-year has a little more oiliness in the mouthfeel, (which I love) and a touch more elegance in its delivery, this single cask has depth of flavour and fullness of delivery. That cask strength is just joyful for us whiskey enthusiasts and I thank the Celtic Whiskey Shop for securing this cask and doing the right thing. Here's to more cask strength offering and its onward and upward for Irish whiskey in 2017.
