Flavour Profile: Spicy & sweet
Restrained, but attractively well-rounded, the nose
suggested caramel wafers, Demerara crunch, honey waffles and rum-soaked fruit
cake, with hints of orange blossom and balsa wood. The palate gave us maple
pecan cinnamon Danish, Stollen, honey, pencil shavings and warm spice
after-tingles (ginger, clove, mulled wine). The reduced nose sweetened up even
more – gulab jamun, icing sugar, chalky sweets – but with herbal and savoury
elements as well (menthol, peppermint, apricot and pistachio stuffing). The
palate was now a comforting balance of syrup and honey-glazed carrot sweetness,
with gentle spices and mild wood tannins supplying the inner structure and
backbone – very satisfying indeed.
