SMWS tasting notes:After fourteen years in bourbon, we transferred this to a second-fill Sauternes hogshead. Our noses caught honey, toffee and brown sugar sweetness; sherbet lemon and cocktail glass lime; also polished wood (chemist-shop counter?). Zingy citrus dominated the palate – lemon and ginger tea, orange zest, lime and cooking apples – with just enough honey to keep it agreeable; woody spices played in the finish. Subtle floral notes appeared on the reduced nose – orange blossom, flower meadows, cut hay; still holding crunchy nut cornflakes, butterscotch and almond paste sweetness. The reduced palate tingled our tongues pleasantly – citric, salty, spicy and sweet – an enjoyable combination.
DRINKING TIP: Early afternoon – in the garden or on the deck of your yacht.
