    Powerful and dense classic Aylovsky Molt, the palette of derivatives is not rich, but whisky came out very bright and detailed, juicy.
    • Nose
      Clear, dry, strongly pronounced smoke-peat with iodine notes, smoked boards, bandages, light oily hues, metal motifs, tarpaulin, canvas.
    • Taste
      Powerful, saturated, smoke, peat, oak, syrup sweetness, butteriness, lemon and grapefruit peels, coal, ash, ginger, a little black pepper.
    • Finish
      Spicy, warming, sweet-peat, smoke, coal, caramel.

    SMWS Tasting Notes

    Colour: Pale straw

    Flavour Profile: Heavily peated

    The nose had definite, but temperate peat smoke – bonfires
    near rock-pools, cigars stubbed out on plastic ashtrays and light medicinal
    notes – all balanced by good honey cake sweetness. The palate was intense and
    mouth-filling – barley sugars and sherbet straws balancing cheek-tingling coal,
    ash and slightly acidic smoke. Sniffing the reduced nose we encountered a
    friendly gentleman beachcomber wearing smoke-infused woollens and a canvas hat,
    carrying driftwood – he shared his lunch of salted grilled prawns and slightly
    burnt pastries and ginger biscuits. The reduced palate was dangerously more-ish
    – mild smoke, honey and sugar-coated fennel seeds; drying charred twigs on the
    long-lasting finale.

    Drinking Tip: If you can’t get to a beach, put on a suitable
    movie – Local Hero, The Beach, On the Beach, etc.
