Rich toffee and honey. There's a potent cedary, gingery, woody spice to this. Rich nutty notes, getting towards peanut butter. Some fresh fruit: lemon, green apple, banana, plum, cherry. Also some raisin and date. A good dose of cinnamon. Maybe a touch of peat. Some challah bread. A trace of salt and minerals.
Some water has sweetened the nose up and brought out orange and wintergreen, along with sesame, honeycomb, and malt.
There's some real ABV heat here. Oily, oak-forward, and astringent. A good dose of black pepper. Tart berries. Toasted sesame seeds. Caramel. Herbs. I'm gonna add some water to this one.
There's a real waxy, woody, honeycomb feel to this now. It's gotten slightly floral, and the spice has been knocked down a touch. I'd call that an improvement.
Finish: On the short side. Lingering oak and spice. A fair bit of sweet wine. Apple tartness, and banana. Nut brittle. Bitter orange peel. Jasmine tea. Mouthwatering minerality.
