Very nice nose, palate and finish are hot and have a slight bitterness. A good pour with lots of interesting flavors, sherry and spices are abundant yet don’t overpower

All in all, it’s a solid cask. The peat was unexpected but really nice, there’s a mild but well-balanced sherry influence, and those nice nutty cereal-y notes. Good stuff.

Nose: Honeyed and fruity. Slightly hot. A mild amount of sherry is present: raisins, red apples, orange, rancio, and beer nuts. Rich honey and toffee, with plenty of sweet cereals. Slightly solventy and funky, too. Cured meats, black pepper, ginger, and lime. A bit of chipotle? No wait, it’s peat!
Water added a green note, coconut, and sharp red fruits, almost giving the impression of a very young whisky. There’s also some bananas and maple-syrup-covered waffles now.

Palate: Arrives with red fruit and citrus, followed by cereals (granola), strawberry, and grilled meat. Surprisingly peaty here. Oak and rich tobacco, followed by sesame oil, cured meats, and sunflower seeds. Some grapefruit pith, then espresso and dark chocolate, then more deep, dry oak.
Water brings out a strong floral note and more (olive) oily qualities, as well as a certain sharpness.

Finish: Long and dark. Rich dark rye bread and chocolate. More sunflower seeds and some peanut butter. Soft, grassy peat. Red apples, lemon drops, and honey.
The added water made the finish shorter and more floral, with heavier toffee.
