Nose

(Opening of bottle) Right after pouring it's a mix of the most sublime olive oil and acrylic paint. It then keeps getting fruitier with some gasoil-infused pineapple or something, smoked lychees, brine, hemp ropes, rubber boots. Its spontaneity is great at this age, really. With time, it settles on various fruit vinegars (red fruits, cider, maybe some exotic fruits) with a huge citric background, very vivid (briny lemons, limes, oranges). Top notch.

Taste

Nice crescendo, I'm quite amazed at how powerful it still is at that age. One the one hand, the malty-salty-ashy "block", quite typical. On the other : citrus big time, mostly. Orange but also blood orange very clearly, plums, camphor, but some occasional flashes of fresher things like bananas and limes. Some clear minerality as well (rather blue stone than limestome if that makes sense). Chewy texture all the way through.

Finish

Might be the most amazing part, I found it incredibly evolutive and clean, with luminous notes of bitter citrus, lime juice, but also floral things like violets and basil, and also spicier things like mustard and camphor. And then a huge evolution on beach sand and ashes, still keeping a distant citrusy touch for what seems like forever.

Comments

With water : oh wow, the nose changed quite a bit ! Actually a tiny bit of water revealed its true age and complexity : old books and leathery things, umeboshi, star anise, some more subtle fruity episodes ... seems even classier than before ! Sadly it makes the palate and finish a bit more thin.

All in all : quite an amazing ride. Old Caol Ila can only be described by itself ; but for it to be that assertive, spontaneous and powerful after all that time still came as a surprise. Moreover, the fabulous finish and the fact that its profile really gets complex with water is gonna push it to a very light 92 (91,5 rounded up). Curious to see how the bottle's gonna evolve.

Nose

Ein wunderschöner, aschiger Rauch mit einer betörenden Süße umschmeichelt meine Nasenspitze. Frische Vanilleschoten, Crème brûlée und Karamellbonbons drängen den Rauch nahezu in den Hintergrund. Der Alkoholgehalt in Höhe von 52,9% ist perfekt eingebunden und ermöglicht kräftige Atemzüge knapp oberhalb des Glasrandes. Helle Früchte kommen nach einiger Zeit immer intensiver zum Vorschein. Grüne Äpfel, Zitronen, Anklänge von exotischen Früchten (Pfirsich, Mango) und Orangen unterstützen den frischen und süßen Gesamteindruck. Würzige Eichenholznoten verweilen noch angenehm Hintergrund. Die Ausgeglichenheit der differenten Aromen ist schlichtweg überragend. Welch‘ Harmonie!

Taste

Seidig weich, fast sirupartig breitet sich der Malt von der Textur im gesamten Mundraum aus. Umso kräftiger schlagen die Aromen ein: Beim 1. Schluck prickelt es leicht und angenehm an der Zungenspitze (Pfeffer/Ingwer) und aschiger Rauch tritt demonstrativ in Erscheinung. Nach gut 32 Jahren Reifezeit habe ich das in dieser Intensität nicht erwartet, da ich beispielsweise den Caol Ila 25 Jahre, hinsichtlich seines Rauches, bereits deutlich gezähmt in Erinnerung habe. Die frischen und süßen Eindrücke beim Nosing setzen sich auch geschmacklich nahtlos fort. Reichlich Vanille, Crème brûlée, Waldhonig, Zitronen und helle Früchte manifestieren das weiche Fundament. Sogar Anklänge von Gras/Heu sind weit entfernt wahrnehmbar, verweilen aber ganz subtil Hintergrund. Schöne Holzaromen (alte Zigarrenkiste) und würzige Eiche gewinnen zunehmend an Präsenz und es entsteht eine ganz leichte Trockenheit am Gaumen.

Finish

Lang, süß, rauchig und wärmend. Pfeffer, Vanille, helle Früchte und saftige Grapefruits dominieren zu Beginn das Finish. Der aschige Rauch klebt förmlich am Gaumen. Würzige Eichenholznoten runden das Finish sehr harmonisch ab und werden zu keiner Zeit überladend oder gar störend. Am Gaumen wird es ganz zum Schluss minimal bitter und ein wenig trocken. Der honigsüße Rauch erobert das leere Glas auf eine wunderbare Art und Weise und bleibt lange erhalten. Chapeau!

Nose

Caol Ila, Rauch, Bourbonfass, 32 Jahre, 52,9% Alkohol. Alles in der Nase. Sehr spannend! Kommt zum 25jährigen Caol Ila OA die Sherryfass-Fruchtigkeit zum Rauch, sind es hier die helleren vanilligen Bourbonfass-Aromen. Wobei das Fass viel intensiver "eingebunden" wirkt, der Rauch ist weiter im Hintergrund. 32 Jahre sind schon eine Ansage. / Mit etwas Wasser kommen die hellen Früchte etwas in den Vordergrund, der Rauch bleibt jedoch präsent.

Taste

Ganz tolle Öligkeit. Schwer kommt er in den Mund, der Rauch tritt in den Vordergrund. Der Alkohol meldet sich vernehmlich. Die hellen Früchte bleiben noch im Hintergrund, mittlere Schärfe belebt den Gaumen. / Mit etwas Wasser kommt zuerst Vanille stärker, dann die Rauch-Torfnote und dann etwas Pfefferschärfe.

Finish

Im Abgang kommt auch die Eiche durch, die Schärfe schwindet langsam, "fadet aus" sozusagen. / Der Abgang bleibt mit Wasser wärmend-lang und spicy, die Eiche meldet sich wieder vernehmlich.

Comments

Eine starke Sache: Bourbonfass, Rauch, starkes Einzelfass. Wer diese Richtung mag, wird damit glücklich werden.

This Caol Ila 1984 bottled by Cadenhead was selected by their Belgian importer The Nectar to celebrate their 10th anniversary. Simultaneously Cadenhead released a second Caol Ila 1984 that was 31 years old.

Although this bottling bears the black Small Batch label (normally used for bottlings from two or three casks), it seems to be a single cask release.

Nose: mineral and slightly dusty start, with lots of wet ashes, as well as subtle hints of antiseptics. Becomes fruitier, showing nectarines, honeyed apples and rhubarb jam. Some vanilla. Sweetish, but there’s always the light, resinous peat and traces of acrylic paint around the corner. Mouth: sweet again. Creamy malt, cane syrup, orange candy and herbal honey. Tobacco notes. Ashy peat again, which becomes grassier and makes the whole a bit drier. A light salty touch as well. Finish: long, on almonds, bittersweet pink grapefruit and gentle smoke.

Caol Ila, Cadenhead and The Nectar, you can’t go wrong with these three names on a label. But anyway, I confirm the quality.

Nose

De la pomme vanillée, de la fumée de cendre froide (mais non dominante). Ici aussi une fraîcheur végétale, mais plutôt sur la rhubarbe. Aussi fin que le 31 ans, mais légèrement plus fruité.

Taste

Une onctuosité immédiate. Le fruit sucré et au miel domine, très vite suivi par des volutes cendrées. Quelques gouttes de sirop de citron salé.

Finish

Longue. Une vague saline s’engouffre en bouche. Une amertume fruitée appuyée s'installe en fin de bouche.

Comments

Le lien de parenté est évident entre les deux, tout comme la haute qualité qui est au rendez-vous chez ces deux Caol Ila. Le 32 ans est clairement plus fruité, tandis que le 31 ans me paraît plus malté et plus rustique. Les deux nez me plaisent de façon égale. La bouche du 32 ans me plaît plus que celle du 31 ans. Sur la finale, c'est le contraire, l'amertume du 32 ans me gêne un peu et je lui préfère celle du 31 ans. Pas facile de les départager, dans ces conditions. Alors à qualité globale égale, cote égale, pas de jaloux !
