St. Patrick's Day, time to review some classic Single Pot Still Irish whiskey! Like a whisper of spring, the nose of Redbreast 12 features fresh vegetation, clover and heather honey. Pears, apricots and melon intermingle with cereals, green malt and hints of sherry. On the palate, there is an interesting potpourri of floral vanilla, unripe banana and lemongrass, interrupted by peppery kicks of wood spices from the casks. Lingering freshness, nuts and mildly dry citrus zest remain in the subtle finish. It's a unique style of whiskey, and you can't go wrong with it.

It is a very nice base RedBrest, a very good balance in taste, we can say that this is his forte. Pleasant floral and natural nuances in the aroma. I didn’t expect anything good from Irish, because I don’t really love them, but this one is good.
    • Nose
      84 84
Pleased fresh, pleasant, spring, delicate. Unripe melon, dry American breakfast (Cyril), flower glade, a little peaches and apricots, natural aromas: wood, grass, spices, oak, cloves and cinnamon nuances.
    • Taste
      84 84
Very balanced, without excesses either in sweetness or in sourness or bitterness, quite delicate. Grassy tincture, flowers, wet wood, a good sherry barrel, honey, vanilla, caramel are felt, breathing nuances of nuts appear.
    • Finish
      84 84
Very soft, medium-long, not tart, even slightly watery, but this is rather good for this whiskey. Wood cut, floral nuances, cocoa, barely perceptible sweetness of chocolate.

THE classic among the Irish Single Pot Still Whiskeys, still.
If you realize that it is "only" bottled with 40%, it is unbelievable what it offers on flavors both in the nose and on the tongue.
Even when pampered by Ü40% fillings (or "spoiled" depending on your point of view), this is an incredibly exciting whiskey.
    • Nose
      90 90
An intense spicy-fruity nose, which reminds you of Christmas pudding.
Dried fruits (figs!), Vanilla, honey, brown sugar and ginger at the beginning.
Everything tightly interwoven and yet very well distinguishable.
After a while, the fruits are fresher and sweeter: kiwi and pineapple.
      Sherry resonates.
    • Taste
      90 90
      Oily and incredibly mouth-filling.
Leather and tobacco notes. Mild pot still spices, sprinkled on the dried fruits.
Getting fresher with time, some menthol. In addition, also on the tongue vanilla and honey.
    • Finish
      89 89
Medium-long to long finish, the wonderful Sherrynoten puts on the tongue. Somewhat peppery towards the end.

This is a great bottle at its price range – it is a rather straightforward flavour profile of vanilla and sherry sweetness that may be said to be tried and tested to be widely popular with all folks. It is also very flavourful considering its 40.0% ABV.

Anyone who enjoys Christmas cake with dried fruits, or toasted raisin buns would enjoy this, and a simple man like me certainly does. At its price range, I would recommend any alcoholic to include the Redbreast 12 in his personal collection as a go-to drink, and if not, as something for his friends who are just beginning to drink whiskey (or whiskey).

    • Nose
In the glass, the whiskey is a deep amber indicative of a long sherry maturation.

On the nose, the whiskey leads with moderate vanilla with lightly toasted almonds and walnuts. This develops into a clean sweet fragrance of Sherried fruits, such as raisins and cranberries. There is a slight floral fragrance and fresh cut grass.
    • Taste
On my tasting, a surprisingly sweet first act, with vanilla, cereal and honey-roasted almonds, with growing notes of caramelized apple. The sweet malty notes are very very clean and crisp, indeed true to its Irish triple-distilled character.

In the midst of it, some sherry and spice grow on my palate, although it felt rather subtle because my attention was focused on the sweet and light malt. Once I caught notes of some dark fruits, I do realise the “sherry undertones” advertised on the label are indeed present and further sips draw me closer. There is a flavourful but well-rounded sherry note with raisins, cranberries, hawthorn candy flakes (山楂) and a bit of woodiness from the toasted barrel. Very very slight leatheriness and spice accompany the dry fruits. The texture is velvety and lovely, and I really like the marriage of equals between the clean and sweet vanilla flavours on one hand and sherry notes and spice on the other. Neither profile overwhelms the other, which leaves me to be able to enjoy both.
    • Finish
The finish is long, with raisins and hawthorn candy, and warming ginger spice. While the flavours are light and crisp, the texture is not just smooth but somewhat creamier and more velvety than Scottish single malt- perhaps I am thinking too much but I would attribute this difference to the unmalted barley used for Irish.

Jolly nice drinker's whiskey, albeit a tad weak and thin on the palate.
But the hints of dried figs and honeyed fruit are good.

Great whiskey for irish whiskey lovers. Delicate, sweet. Very drinkable. It should be stronger than 40 % though. Great digestif.
    • Nose
      Delicate sweetness, honey.
    • Taste
      Delicate, sweet. Easy.
    • Finish
Some sweetness stay for a while. Yet it is quickly gone.
