    N: After two youngens WB & WB, let's crack in to some older drams - and 23 years is a very fine age indeed. Deep vanillas, sour/dank wood, some fusty old fruits wrapped in time - which means it has a certain softness to it but has also retained enough spirit enough to frolic in the hay. Like the previous two drams, it's faithful to its distillate roots. Given time, and in comparison [mainly to the Aultmore to come WB], it's showing a little sugared lemon now, as you'd expect from the distillery bottlings and it’s terroir.
    T: It's again a natural one with plenty of light, malty-beer notes. A little water will draw out some berry fruits and raisins. Classic refill bourbon leads the way, possibly a third fill?
    F: Deep, dank wood that you only get from age, but a little edgy/uneasy. Classic refill bourbon cask, rather neutral. Nice concluding mouthfeel if a little drying
    C: Lovely age, the years of which were all seemingly required to extract modest information, otherwise this would be a very simple, natural and neutral spirit indeed. I like it but it's totally unmemorable. The most drinkable so far mind, most rounded.

    Colour: Polished saxophone
    Flavour Profile: Spicy & sweet

    Initially we got musty old books and wet hay in the barn;
    but give this one time and you will be rewarded. Fresher notes arrived with cut
    grass and grapefruit juice but then also deeper aromas of preparing a new
    flower bed and even a spicy chorizo and rocket sandwich appeared. On the
    palate, two classic cocktails; Manhattan with brandy soaked cherries and an Old
    Fashioned with a twist of citrus rind garnished with an orange slice. Water
    brought out spicy, vanilla aromas as well as croissants with raspberry jam and
    on the palate, beer marinated moose steak with miso buttered sautéed potatoes.

    Drinking tip:  When
    left with plenty to ponder
