Well, with such a malt the expectations are high. You get what the outer appearance promises: a massive load of sherry with many old aromas and at the same time fruitiness and sweetness. Actually an absolutely brilliant malt, if only the sulfur would not be! He is not extremely pushy, but keeps me from buying a large bottle. For this price may (for me) be no false notes in it.
    • Nose
much, much sherry, alcohol, sulfur, furniture polish, a few herbs, mint / menthol, milk chocolate, earth, forest soil, now more and more sweet partially fermented forest fruits (blueberries, blackberries, currants), old wet wood, strawberry jam, raisins, now getting sweeter. An extreme sherry freight and complexity has been put through the barrel on this whisky. A malt for hours sniffing. Now I've found what I was looking for: mulled wine! (Thanks, Gloin) The sulfur I hardly perceive towards the end. In the second nose again awesome sweeter and fruity
    • Taste
Oak, full-bodied, dark chocolate, tingling, really creamy and "chewing", espresso, a lot of wood, sulfur, menthol, cinnamon, saliva, berries (jam), pleasantly sweet, again a strong aroma.
    • Finish
old, a little bit of sulfur, bitter chocolate, delicious fruity-sweet oak, getting drier, sticks to the palate and lips, sherry, a few nuts in the background, coffee, medium-long

  2. dRambo scored this whisky 90 points Connoisseur

very interesting malt - the nose is really dirty, sometimes almost repulsively sulfurous - to rotten eggs - for me significant Fehlnoten in the nose - come and go - on the palate predominantly cool, with so little sulfur input that nothing bothers - crazy part
    • Nose
      87 87
dirty sulphurous sherry - silicic acid - formic acid, scent of wood, matchheads, sour red berry smoothie, raspberries, red currant, also noticeable tannin load, mint tea sweetened behind, also warms plum jam, orange fruit and peel, leather, old wood

I like the lower notes very well - the sulphurous top notes rather not at all - (85 + 89) / 2 = 87 points
    • Taste
      91 91
heavy, dry woody aromas, grated barrel staves, dry, chocolaty with a lot of wet leather, sulfur wood heads, blackberry purée, ripe blueberries, some plum jam, tobacco - very dense, almost particulate - dirty
    • Finish
      91 91
gentle, charming, cultured - slightly cooling and warming on the palate, dark chocolate, blackberry jam, mint, pepper, gingerbread spices, very long

Nose: Wow ... freshly roasted coffee, black tea, raisins, dates, currants, passion fruit. Dark, almost overripe, like a reduced sauce. Rather bitter than sweet notes ... Heavenly!

Palate: Gentle start, then takes a wonderful ride.

I find bitter chocolate, espresso notes, but also a lot of oak.

The many tannins are reminiscent of dry port and red wine.

Thick, quite creamy, it looks sweeter here than in the nose.

Conclusion: Full of my thing and even more than I had hoped for.

Unfortunately that only happens very rarely.

It just can not be dark, spicy and sherrylastig enough with me.

I'm glad thieving with the remaining two drams still a bit deeper into this horny bottling to be able to dive. 91 points with air up ...

    • Nose
Elegant, full. Nutty sherry, caramel, hazelnut. Raisins and some leather. Yellow plums, red apples, currants. Rotten wood, a little cinnamon, a hint of mint.
    • Taste
Round, strong, spicy. Raspberry cake, strawberry jam, baked apple. Freshly ground pepper. Plum jam with a hint of cinnamon. A touch of beeswax, nougat, walnut and dark chocolate.

  5. LordBellamy scored this whisky 89 points Expert Senior

Nose: This is Sherry, folks - overripe and dried plums, raisins, hazelnut, burnt caramel, old furniture, some tobacco, unfortunately also burned matches, pencils, cinnamon, dark chocolate, sour cherries and freshly ground coffee.

Taste: right at the start of the fat sherry, it fills the entire mouth with a toffee sweetness, the sulfur is gone, with the sweetness comes many other flavors like cherries, ginger, plum, sweetened espresso, cinnamon and nutmeg, eerie a lot to "chew" - you do not want to swallow it ......

Finish: long and very dry due to the fat sherry, bittersweet chocolate, again a little bit of sulfur, ends with a lot of walnut flavors and some licorice with a slight but not too strong bitterness.

Water: Not at all! He has just the right strength for me. Anyone who does it anyway, gets in the nose significantly stronger notes of the exiled caramel.

Conclusion: This could simply be a dreamy sherry whisky with well over 90 points ... yes, if only the sulfur would not be. Too bad, just a pity. Otherwise, he has everything a big, sherry-barreled malt needs: depth, dark sweetness and complexity. Since the sulfur is not too dominant, it still remains a very nice whisky - 89 points

Great sherry board, intense, strong, spicy ... the original 160 € were a good investment.
    • Nose
dry and very aromatic, ancient, dusty furniture, furniture polish, floor wax, lots of cocoa, there is also something fruity-juicy-sour, blackberry / black currant liqueur, old leather chair, Maggi
    • Taste
a pleasant, dry, chocolatey bitterness, lots of cocoa, coffee, spicy oak, black pepper, in the background plum jam, sugar beet syrup, walnut
    • Finish
long and dry, coffee, walnut, camillan, a little furry

  7. Gloin scored this whisky 90 points Expert Senior

The whisky smells as dark as it looks, very intense and heavy. This impression continues seamlessly in the mouth and also the long finish adapts. I do not know what an Aultmore tastes like, but there seems to be little left of the original character. Here dominates the sherry barrel. The whisky is not yet over its zenith, but rather bottled at the right time.
    • Nose
Loads of dark sherry pour from the glass, leather, raisins, rum, dark cocoa, mulled wine, cinnamon. Behind it old old-fashioned wood, furniture polish, old books.
    • Taste
A velvety soft body with almost creamy consistency. The start is gentle, but then suddenly the whisky unfolds its power, ginger covered with very dark chocolate, bitter oak, kirsch, but also sweet hints, dark bittersweet forest honey, the association of pine resin
    • Finish
Almost numbly, the tongue tingles, bitter oak sticks to the palate, weak raisins, bitter chocolate, black coffee, dry sherry, long

  8. grinface scored this whisky 90 points Expert Senior

A dram from the dark part of the whisky universe. It pulls you in like a black hole of aromas. And if you don't have a problem with the sulfur, then you can really enjoy it. I didn't have any that tasting night!

      90 90
A so-called dirty sherry nose. Not everyone likes this style of whisky and I can understand that. Sulphur, wet forest floor, steaming alcohol. It takes at least getting used to at first. In addition, a heaviness of leather and tobacco. But also fresh forest fruits and cherries.
    • Taste
      89 89
The taste buds are ringing. Butter and sulphur, moldy leaves and wood. In addition sweet fruits, garnished with some ginger. If you let it swirl through your mouth, wood and nuts are added.
    • Finish
      90 90
A heavy, dry red wine. In late autumn, in front of the fireplace. The storm is raging outside - somehow on the palate too. The aromas remain sophisticated. There is also a layer of bitter notes: coffee and dark chocolate. The slightly sour touch is now towards plum. There are raisins, too.

Oh yes, great cinema. He comes across as old and dignified. Old wood, library, dusty. Yes, a bit of sulphur, which for me is more interesting than a miss. A bit unexpectedly sweet in the finish, but also sulfur lastog, which only fits to a limited extent.

I think this malt more than meets expectations. But I also have to say that I'm a real sherry fan. At this price point for its age (25 years) you get a massive load of sherry with lots of old flavors. For me an absolutely brilliant malt! I can't see sulfur at all and sometimes I really wonder what some are expecting. Anyway, I think it must have been an ingenious cask in which the malt has slumbered for 25 years. If it was still for sale, I'd grab it. For me it is now a real rarity that cannot be compared with the modern bottlings. 1990 was a completely different generation of whisky!

Yep !! Great malt. Coherent with very good balance and clear lines that are complemented very well by small corners and edges. Very nice and aromatic. One likes to deal with that.
    • Nose
      91 91
A deep, dark sherry malt pours into my nose first, but despite the earthy and dusty notes, it also somehow appears soft and elegant. Lots of dark fruits like blackberries, blueberries, dark grapes, raisins, plum must with a rather intense honey sweetness. At the same time, however, sulfur also emerges quite intensely, but it integrates nicely into a leather and tobacco note. Everything looks more mature and settled. Coffee, chocolate and nuts emerge in the background. After a long time in the glass, the earthy and slightly dirty dusty notes are followed by wood aromas. Slightly refreshing, there is always a little mint with it.
Absolutely something for the nose! Very well. Precisely because I like these slight sulfur notes so much.
    • Taste
      91 91
The palate ties in well with the great nose. Lots of dark and sweet fruits. Slightly bitter coffee with dark chocolate. In addition, the wood notes and light tobacco taste. Tingly and hot but not alcoholic, rather creamy and soft in the aftertaste. The slightly bitter coffee turns into a spicy note of pepper, cinnamon and nutmeg. A strong spicy note gradually comes. The tobacco also comes out from time to time.
    • Finish
      90 90
long finish, spicy, here again a nice cooling mint note, dark chocolate, fruitiness is slightly reduced. Also sulphurous, slightly sticky, furry mouthfeel that goes well with this heavy and sedate malt.

    Splendid color.
    Deep mahogany.

    Very intense, ripe sherry.
It smells the way you would imagine it as a sherry lover.
    Creamy, fruity, full.
But you can also smell that it is strong.

    Strong sherry barrel.
    The wood notes spread out.
    Old, rotten, bitter wood.
    Lacquered living room table.

    He already has something.
You can tell the 25 years.
    A woody finish.
    The nose is gigantic ...

I really like it. Certainly not the most balanced malt, but I didn't expect that to be the case either. The sherry sets the tone here. Add to that the dirty and slightly sulphurous notes, which probably not everyone likes. The sulfur is much more restrained than, for example, a Deanston 20yo.
    • Nose
Dark oak tones. The sherry is rather tart and nutty. So dirty notes overall. Also sulfur. Now some wild berries, which are rather sour. After a while, the fruit will become sweeter. A bit of forest honey. Leather.
    • Taste
Quite oily at first. The honey again. More like aronia honey. Rum raisins. In the mouth, the berries are now much sweeter with a slight residual acidity. Dark caramel. Red wine cake. A little sulfur and dirty notes.
    • Finish
There is a slight sharpness. It's getting drier. Dark chocolate. Nuts. Fruit acid.

Aultmore was only really put on the market as single malt in 2014 when owner Dewar’s & Sons launched the so-called Last Great Malts series. Highlight of that series is a 25 years old. But today I find myself at my trusty desk with a sample of a 25 years old Aultmore from a sherry butt by Glasgow based independent bottler A.D. Rattray. It is very dark and bottled at almost 53%. My saliva glands go into overdrive just by looking at the glass.

OMG, a grand nose. Dark sherry notes with leather, rum, furniture polish and lots of cinnamon. Butter in the frying pan, orangettes, dades and fresh figs. A stew of dark fruit, actually. But I must add that there is little left to remind me of the distillery character of Aultmore (on the other hand, this is only my 11th encounter with this Speysider). This malt, when nosing blind, could easily be mistaken for an exceptional sherry.

The arrival is both creamy and piquant. My mouth is on fire! Creamy and spicy on ginger, lots of wood spices (with a rather big bitterness) and some resin. The malt struggles to show its fruity side, but from the second sip forward, when the taste buds have accustomed to the high ABV, the dark notes shine. Again dark fruit and chocolate, upholstered with candied orange peel and cherry liqueur. I am in heaven!

The finish is very long, warm and spicy, but sweet at the same time. Nevertheless, it leaves the mouth parched. At the death, a nice hint of coffee grounds and rum raisins appears.

Delicous sherry… err… single malt! Ah, when it’s this good, who gives a f*ck?

Cherry jam, white plum, fig, dog rose, raisins, ripe apple, buckwheat honey, rusks, cake, black tea, bitter chocolate, caramel, condensed milk, bitter, burnt tree. Excellent balance!

    • Nose
A maximum of sherry, heavy-loaded as they say (one of my neighbours is regulary heavy-loaded but in another way). Beautiful notes of plums, grapes, but also berries and cherries. It also smells (good) old leather and fresh nuts. Nice beginning!
    • Taste
Wow, with its 52.6%, I certainly expected something relatively strong in the mouth but here too it’s quite heavy! The palate is saturated with strong aromas of sherry, walnuts wine, chocolate and tobacco. Plums and grapes bring a little sweetness in second mouth. You can add water to get it sweeter, leaving more place for the fruits. But personally I like it neat ;)
    • Finish
Long and dry, on plums, nuts and tobacco.

    • Nose

I liked the color very much. On the one hand - this is the color of a rich good cognac, the other day before yesterday's tea leaves. I really liked the "legs" - very thin, then in addition a small transparent droplet flows down this leg, and the legs themselves hold very long. A good and hard-boiled sherry monster. The aftertaste lasts forever.
    • Nose
      Thinner, apples

Excellent age sherry molt, magnificent multifaceted, complex and deep aroma; strict, noble taste / finish, slightly reserved, without superfluous, redundant notes; verified balance, bright character and self-sufficiency of this whisky open the door for long thoughtful tastings with deep immersions and meditative savoring of nuances.
    • Nose
Restrained, dry, the first nose - a furniture varnish; a little mold, mushrooms - fresh and dried; nuts, noble wood, stain, ink, earth notes, pu er, prunes, leavard, home apple pasta, pre-foliage, herbarium, little solvent, furniture varnish, old furniture, cigar box, wet pipe tobacco, old leather goods, wax.
    • Taste
Saturated, mobile, tart, sweet and sour, spicy oak, prunes, raisins, dried mushrooms, leavened cream, creamy hints, boiled condensed milk, fudge, toffee, coffee.

    • Taste
Great and deep spiciness, salty caramel from burnt (very black) creme brulee, baked apple, black walnut, antique oak, sweet-sour berry compote with a little water, all of course a certain basic bitterness and some sulfur

A really good malt. The malt opens with water and releases its aromas completely. Nice Stöffchen.
    • Nose
heavy, dark fruits; in addition a clear sulfur note mixes you; dark dark chocolate; the alcohol is noticeable by a menthol note; Malt and nutmeg are added; Prunes and wild berries; with water it becomes noticeably more chocolaty and the sulfur goes back a little bit
    • Taste
creamy; now the alcohol makes something more noticeable; nice dark chocolate; Black bread and spicy oak; Plums and cherries; very sweet overall; with water it becomes even creamier and silky soft; In addition comes significant seasoning and chocolate
    • Finish

Over 89 points in the base at 45 ratings. Great nose, very tasty on the palate - and then, in the finish, suddenly as well as surprisingly, the sulfur kills in the form of musty mushrooms, and I am more than happy not to have blindly bought the malt at the time. Does not meet my taste due to the miscar rating. Too bad.

  37. didi1893 scored this whisky 91 points Connoisseur

Again a Schnüffelwhisky with a wonderful nose. In terms of taste, the 25 years of storage in a sherry barrel have left their mark. Fruity sherry and spicy wood flavors are the result of this sherry barrel. The intense sherry influence is great and make the Aultmore a taste experience. Great part!
    • Nose
Intense dark fruits stand out of the glass. Raisins, dates and dark berries mingle with a hint of dark chocolate. Sweet caramel and some vanilla come from the intense fruit. A touch of orange and ripe apricots is in the air. A subtle leather note is noticeable. The salivation is massively stimulated, I really want to try the part now.
    • Taste
Sweet fruit dominates the first moment before fierce and spicy wood flavors cover the fruit. Pleasant leather flavors transform into slightly bitter oak. The alcohol is biting discreetly in the mouth. I wonder if I allow the Aultmore a few drops of water. A little bit of water makes the fruit aromas and the spicy wood stand out better, whereby I now feel more sharpness and pepper. Creamy fruit, wood and sharpness now dominate the taste. A little espresso comes out of focus.
    • Finish
Long-lasting sharpness and spice exude a warming mouthfeel. Again leather and intense wood flavors. Very slowly, the finish sounds and leaves a pleasant walnut flavor which is becoming increasingly bitter and intense.

This is a rich and mature whisky from an incredibly intense sherry cask.
Full of "dark" flavours, perfectly harmonized and well balanced. A big

    • Nose
A massive load of sherry! Deep and rich with sticky toffee, and heavy
dark fruit - raisins, prunes and dates. Thick treacle with burnt sugar
and pleasant flavours of Christmas cake. A whiff of burnt matches
emerges with a gentle touch of citrus and grape skins. Very complex.
    • Taste
Multiple layers of dark fruit, sultanas, raisins and sticky plum jam
intermingle with slightly bitter notes of orange peel, marzipan and a
wee touch of sulphur. Warm and intense. Spiced oak, pepper and dark
chocolate linger towards the slightly dry finish.
    • Finish
A medium to long finish with sticky honey and mouth-watering orange
peel. Slightly bitter notes of tannic oak and spice on the tail.

WITH WATER: A bit fresher on the nose by adding a splash of water with
big notes of sherry and stewed dark fruit. Sweet and fruity with nicely
prickling oak on the midpalate. The finish, however, is short and dry.
