    Milder & yet more complex than the standard CC. A wonderful drop that should not be missing in any well stocked bar.
    • Nose
      A generous nose. Sweet scent of maple syrup & liquid caramel. Bourbon vanilla, staves of old barrels & a tiny hint of smoke. Almost unchanged with water, only small tender notes of dark berries are well integrated with.
    • Taste
      Starts soft and then becomes even softer ... Dark oak wood chips, vanilla, dark red berries, dried fruit & some creme brulee. Water takes the Canadians the fruits, but adds a strangely dusty creaminess in the taste profile.
    • Finish
      The finish keeps a slightly peppery trail, coupled with a mild creaminess. Oak, vanilla, a hint of smoke, everything was there, everything was very pleasant. With water, the sweetness is lost a bit, but add notes of the fruit acidity of red berries.

    Notes from a blind tasting.

    I typed here on a rather young bourbon with about 50% alcohol. Warm, he seems relatively powerful, disturbing doing nothing here. If you look at the only 40% alcohol, you have to realize, however, that the alcohol is very badly involved.
    • Nose
      Heavy alcohol, caramel and roasted aromas. Reminds at times to Wild Turkey. Warms: salt, sweat, lots of sweat, stronger overall.
    • Taste
      The taste is rather thin, with strong alcohol. Warms up a bomb, caramel, coffee, sweet coffee liqueur.
    • Finish
      Long, warming, power. Caramel is medium long, oak very mild, coffee.

    He already has a very special resinous note that I have not found so far. He does not tear me off the stool, but he is not so bad and in any case an interesting experience. Batch / Lots: C12-207
    • Nose
      Pine resin, caramel candy, toffee, some solvents (not disturbing). A touch of pepper.
    • Taste
      Brown sugar, also resinous notes on the tongue. Oily mouthfeel. Wood chips, vanilla flavors. Somewhat peppery and next to it a not exactly identifiable spice. Toasty aromas.
    • Finish
      The finish is quite short. Wood and vanilla aromas dominate, along with pine resin.
