Nose: Sweet and fresh. Right away I got that overripe fruit funk, which makes a lot of sense in hindsight given the cask maturation. Lots of peach, mixed citrus peel and lemongrass. Pastries, vanilla, and cinnamon. It’s got the sweet richness of milk chocolate fudge. I have “demerara sugar” in my notes, which I really hope I came up with before knowing this was a rum cask.
Palate: Not as sweet as the nose. Herbal flavours here: lemon tea, green wood, and mint. Lots of fresh fruit. Sweet caramel and malt. Tart green grapes, pear, peach, and grapefruit. Grassy and mineral on the back end.
Finish: Fresh, with a certain density. Mint, ginger, pineapple, lemongrass, and a touch of hot white pepper.
