    Quick tasting notes from memory ...

    A great standard and 'daily dram' for Armin Fuchs and me!

    Tasting Feb. 2016 with Armin Fuchs and Oszillander.
    • Nose
      One the one hand there is very spicy wood:

      Burnt wood, dark and very herbal, influenced by the alcohol (solvent).

      On the other hand is rich sweetness:

      Different kinds of desert like dark mousse au chocolat, cherry compote, caramelized cherries, brandy beans, pralines, different jams and thick honey.

      Combining elements are sweet maltiness with leather, herbal citrus peels, orange juice and very elegant smoke which is always present in a subtle and supportive way.

      This makes a very round nose where everything dances together, the oak is a bit more dominant than the sweet components which are more elegant and subtle.
    • Taste
      Fiery with some peat, honey, jams, fruit sweetness, citrus, leather, herbal and sweet maltiness, fruit brandies, brandy beans, again mousse au chocolat, leather, dark chocolate, coffee grounds, spiciness, ...
    • Finish
      At first there may come some beer (Pils) within the old Sherry casks.

      Leather, pralines, jams, hints of smoke, saltiness, honey, some raisins.

    A great and rich and very dense nose - adorable!

    The same counts for the taste - a big impression!

    The finish is an equal partner for nose and taste!

    What can I say more? 

    This HP 25 is more wild than the following expression.

    More spices, more power, more dense.

    One of my favorite Whiskies!

    • Nose
      Out of the bottle streams spice and honey, heather and citrus - obviously the HP character - very intense !!

      At first (… the bottle was just opened …) some UHU and spirit, that changes very soon into lemon juice and peal, burnt wooden beams, 'old' fruit sweetness, ashes, peat, jams (much cherry jam!), Cognac, tart-sweet-fruity honey on a fresh crisp bun with butter, honey with a splash of vinegar and Cayenne pepper, Minestrone,  sugar (Demerara, too), hints of banana, fine calf liver sausage, leather (with butter), bullion cube, pralines with some scouring powder, some herbs, plums, Sauerbraten sauce (sweet - with sultanas), white bacon fat, some toffee between, there is a meal in Franconia: 'Stadtwurst mit Musik' - vinegar, oil, salt & pepper and a tiny little sugar and onions in water …, wine vinegar, Schwarzwälder Kirsch, biscuit cream roll, orange juice, leather chair, saltwater on rocks, strawberry jam comes up, pears, green salad, some pinecones, light nougat, leather with a little Eau de Cologne.
    • Taste
      Jams, pepper, cherry juice, citrus, oranges, sweetness of cakes, honey, leather, Brandy beans, citrus peal, Demerara, cocoa powder and dark chocolate, salt, peat, oak, car repair, burnt cake, fruit brandies, sausage sandwich, smoke, charred wood, cereals, leather furniture, Franzbranntwein, salt water, Miso soup, Radicchio, coniferous forest, camping tent, some maltiness;

      later also mineral (rocks, metal), bees wax, apple peal, tart Masala spice …

      All components are wonderfully interwoven and so rich and fat - incredible good!

      Brandy beans (also mixed with honey), Rumtopf, Franzbranntwein on the one side,

      jams and jam sweetness, Demerara and honey on the other;

      from the wood comes dark chocolate, lemon, sweet leather, Cognac, herbal spices, tobacco leaves with honey, vegetables, salt, some wood …;

      aftertaste of forest berry jam, apples, radicchio, butter, dried heather and some honey, beer foam.

    A very good expression of a 25yo HP
    • Nose
      Honey, ripe fruits, milk chocolate, hints of oak, orange jam, brown sugar, fried butter bananas
    • Taste
      Very punchy but also very oily, thick, mellow, salty, hints of smoke and leather, spicy, peppery, malt and hops, subtle sweetness but less fruity than on the nose
    • Finish
      Long and burning, spicy and little zesty

    Sweet nose with significant depth. Spice and sweet and gentle peat on the palate. A complex and wonderful dram.

    Distillery Notes:

    Pour a dram: clear and bright in the glass - a ray of deep golden sunset over the rounded hills of Hoy. Warm the glass in your hand, breathe in: the very rich, mature oak bouquet, with an almost ethery peatiness, will transport you to the surrounding seas and to the peat beds at Marwick.    Next, add a little water: Highland Park 25 Year Old is cask strength and a little water will allow its generous body to exhale; then the rich, full, medium-sweet palate will elicit a burst of flavour.   The finish - rich, long and amazingly sweet for its age - is one you will not forget. However, just as stories re-live through reminiscence, so too do memory and taste buds benefit from refreshing. So pour another dram, and once again evoke the poetry of a Golden Age.

    I love the look and packaging of these dumpy bottles.
    I was saving this as it was bottled in 2000 which is the birth year of my son. I was going to give him it on his 18th birthday.
    Unfortunately I could not wait and opened it when he was 12 - oops.
