- I wasn't sure that this combination of PC peat and sweet rum (note full 12 year maturation in rum cask, not just a 'finish'!) would work before trying it...but I think that it actually does, and ends up offering a unique and rewarding experience. The strong peat so characteristic of PC is there in abundance, but the sweetness of the rum modifies it to 'sweet peat', both on the nose (soft peat blends with caramelised sugars and sweet vanilla here) and (quite remarkably) on the finish, where the sweet/soft peat smoke lingers beautifully. Not as much of a peat monster as many more 'standard' PCs tend to be, so don't try this one after a strongly peated dram or many of the more subtle beauties will be lost (I made this mistake the first time I tried this dram). Definitely worth a try!
