    Tasting Notes by Dave Broom
    NOSE
    Deep and mature yet with sufficient freshness to give it lift. Humus and fresh fennel. Quite restrained yet funky.
    PALATE
    Good feel. Creamy, sweet and quite hot with a deep, solid centre. Light tannins. Powerful with real depth. Blossoms on the back palate.
    FINISH
    Rich and fruity.
    COMMENT
    Does that paradoxical and very Japanese thing of being able to have real lift while going deep at the same time.

    Nose: reminds me of dead treas covered with moss. Oaky but in a rather un-fresh way, I love that! Rather bourbonny in that sense. Sherried fruitiness as well (raspberry, spicy apple cake), very mature nose.

    Mouth: quite hot without water. Meaty sherry. Ginger, apple cake again, a bit of cinnamon. Maltier and sweeter towards the end.

    Finish: medium length, spicy (cloves) and dry.

    Interesting how the Japanese know how to pick some of the best sherry casks. The nose would make you think it’s a bit older, but then it shows the powerful freshness on the palate. Very good.

      Fresh oranges, Cointreau, some xmas spice, little cinnamon, also hints of dried fruits, dates, spices, little citric, whiffs of oak wood - very good

      Very punchy, oily, subtle sweetness, spices, fruity, oak wood, little herbal

      Long, burning, spicy, a tad bitter

    A spicy cognac nose with quite some tannins on the palate maybe a bit metallic, very drinkable

    A malt that requires time and attention to be fully appreciated and that provides long moments of pleasure.
    • Nose
      Powerful without being too alcoholic. Dominated by woody scents, we are on notes of wet undergrowth. Mainly earthy and woody, we also find there (sherry casks) winey aspects: cognac, overripe fruit. This malt requires a long aeration time before revealing itself fully. After about half an hour, softer notes of fruit reach our nostrils.
    • Taste
      Very powerful dry, it is necessary to add a few drops of water to better appreciate it. We then find the woody flavors accompanied by spices (ginger, cardamom).
    • Finish
      Medium to long on dry wood and spices.
