Wasabi on a California Roll

Nose: The peat here is more fragrant and “green” than perhaps a Laphroaig or Ardbeg might offer. it smells like burning cactus - it’s more peat driven than smoke driven, with lots of marine notes, too: Fresh bouquets of shellfish, edible seaweed, and freshly cooked mussels. Other fragrant notes like green tea, butter beans, dandelion, and bergamot also waft around.
Palate: yum....like a smoky carrot cake! Surprisingly sweet and savoury, it’s everything on the nose, and then some. Wafers, smoky molasses, bovril, grassy, and the mouthfeel is deliciously chewy. The marine note is still here, now moving towards a creamy chowder.
Finish: Juicy, fruity, tangy, and peaty.
Comments: The nose was perhaps quiet and atypical for this distillery, but the palate ROARS islay at you. Best of all, it is multi-dimensional. Peat and smoke hold a common thread to a multitude of other flavours that sing and shout.....all of them delicious. A real sweetie, too.

An image of an old derelict wooden pier by a pebble beach on a hot sunny day with ageing lobster pots. Fresher notes appear with time; steamed fish with spring onions, fennel, sage and thyme. The taste is crispy clean, salty and herbal, peach and lavender butter on sourdough bread and a cup of Earl Grey tea. With water aromas of slightly burnt salty pretzels, sun dried tomato bread and pistachio-crusted fish with a lavender honey sauce. The taste has a candyfloss sweetness and a sparkly tropical Starburst juiciness followed by the long finish of wasabi paste on a California roll.
