The first thing you notice on the palate is the spices. Ginger is more
obvious now, but also white pepper and a leaf of mint that keeps it fresh and
alive. The fruit evolves toward fruit pie. Apple cake with icing sugar. Then a
bitter edge as if from grapefruit skins and Seville oranges. Orangettes! The
oak plays second violin, but is clearly a virtuoso. Wonderful.
finish is very long and reveals some more wood, without going over the top. It
remains fruity and sweet.
