Colour: Comice Pear flesh
This sample, from the existing distillery in Brora, is like a landscape pastel painting out of the still house overlooking the Moray Firth. It starts off shy, lemon fragrant wax candles, pear in chocolate sauce and beeswax. Then you discover fresh oysters, rock pools, mixed apple slices and a garden in full bloom. The taste is a shellfish medley and a Dover sole with tagliatelli, slightly lemony, waxy and a hint of smoke - all in perfect balance. With water the nose has oysters with vinegar and tarragon dill, candid fennel, turning richer and more intense floral/perfumed like a soft rain shower opening the flowers in the garden. The taste like sweet incense, dark treacle toffee with a malty intensity of a Porter beer.
