    White wine

A round, balanced, lush and fruity whisky with aroma’s of camphor, creamy smoke, coumarin, touch of oak, brine, sea breeze, Mānuka honey, bayleaf, cardboard, fresh wood smoke, licorice, white wine, lemon oil, grass, wet moss, damp cellar, tarry, sort of soapy (in a pleasant way), floral tones, hint of bouquet garni, toffee, mocha, salted caramel, fresh squeezed grape juice and herbal tones.

A well balanced, medicinal, powerful yet restrained whisky with aroma’s of fatty smoke, herbal peat, grass, butter, dandelions, lemon oil, lemon zest, railway sleepers, tar soap, blackcurrants, fresh grapes, cederwood, soft sweet tobacco, star anise, hint of cinnamon, white pepper, licorice root, bayleaf, smoked ham and a damp cupboard.

A medium long and sweet finish with aroma’s of fresh shaved oak, dark honey, Demerara sugar, bouquet garni, butter, vanilla, grass, licorice, creamy and fatty smoke and soft medicinal tones.

Quite a savory and wel balanced dram! It seems to have a bit more mature character which offers a bit more complexity next to the obvious big peaty smokey character. The subtle spices and even the soft tobacco makes me wonder if this expresion has a bit more of some older casks in there. avery interesting an lovely sipping whisky.

Good but not as fruity and sweet as the first edition, a lot more soot and ash in this one. Maybe oxidization will calm this beast.

Big improvement on the second day of opening. Less soot and the ash is more integrated to allow the sweet fruit to shine through. Should improve as oxidization sets in. Very Good!

Even better on the third day; this has become really well balanced with sweet peat and yellow fruits. It's as good as the first edition.

Not bad at all, good peated whisky but compared to the 2011 version the spirit and oak are not well integrated to start with. Good balance between peat and the rest of the flavors. The 2011 was more about peat compared to this one. However, water destroys everything but the peat in this edition. Without water or only a few drops it delivers power and flavor that lasts.

    (Rating interval 81-85)
    • Nose
Very mild peat compared to the 2011 edition. More barley spirit reminding the nose of wet paper or a glass of grappa. There are also some distant floral notes and herbal notes, bay leaf I think.
    • Taste
Soft peat and lemon in the arrival. The barley spirit is more pronounced compared to the 2011 edition despite lower ABV. There is also tar and lemon pepper as well as complex herbal notes. Water makes the barley spirit even more pronounced, that is the whisky disintegrates quickly with water.
    • Finish
Intense peat, smoked vanilla and sweet lemon as well as bitter lemon rind. The peat is very sustaining.

According to Fred Laing the whiskies in this one are in average clearly older then in the first Christmas Edition. This makes it definitely a more balanced and mature dram.

Unique bottled at cask strength natural cask strength whiskey with 53.8% alc. Bythe beautiful blend the flavors the salty, sea, and peat evident. The rather complex whisky is non chill filtered, a combination of several young whisky and a clear stamp of an old Port Ellen. The bottle and box are printed in full color indicate that this very special whisky is worth trying.

A special Christmas edition of Big Peat

Islay blended malt whisky. Big Peat is made by vatting whisky from only Islay

distilleries. This special edition has been bottled at Cask Strength and has had

its label and presentation tube festively redesigned.
