    Extending: sherry and bourbon barrels
    Region: Highlands, Scotland

Nose: Surprisingly complex, salty caramel, toffee and a lot of malt. Behind it some papaya and mango, apple and peach. In addition, honey melon and a spicy rice pudding with cinnamon.

Palate: Sweet and slightly bitter, grapefruit, lemon cake, vanilla and toffee, bitter caramel and a hint of oak. In addition, a trace of cocoa butter.

Finish: Medium to long, very fruity and dry, with blackberries and citrus fruits, cloves, pepper and some cinnamon in dark chocolate.

This is the third and final expression in our series of single malt whiskies related to extraordinary boats from Wick. The WK217 `Spectrum`
was built in 1920 and was one of the first Wick drifters to use a pioneering way of fishing called Anchor Seine Netting. She was also used during World War II for harbour service duties. Matured in ex American and Spanish ex sherry butts
